FOR THE MARINADE

300g (10½oz) green mango

1 tsp salt

FOR THE PICKLE

1 tsp fenugreek seeds

100ml (3½fl oz) gingelly oil

15–20 curry leaves

1 green chilli, cut into 2cm (¾in) rings

½ tsp black mustard seeds

¾ tsp asafoetida

1 tsp sugar

½ tsp ground turmeric

2 tbsp Kashmiri chilli powder

1 tsp salt

75ml (2½fl oz) coconut vinegar, or apple cider vinegar

Cut the flesh away from the mango stone, leaving the skin attached but removing as much flesh as possible. Slice into matchsticks or 5mm (¼in) cubes. Sprinkle over the salt, cover and set aside for 30 minutes.
